30 Lake Hike

This morning, after walking the girls to school, Cathy, Candra, Amy and Colleen did the five km hike around Lake Burley Griffin, an artificial lake in the centre of Canberra. It was completed in 1963 after the Molonglo River was dammed. We continued on for coffee and some mall browsing and  arrived home in time to make a blueberry pie. We had bought the ingredients a few days prior and had a difficult time finding ‘shortening’, so we settled for lard. Pie making was a bit complicated as we switched over between grams and cups and debated if we were measuring with imperial, US or metric cups.  Metric cups! That is a new one for us, what is a metric cup?? As we mixed the lard and flour, we smelled pork very distinctly.  However, we popped the pie into the oven and it came out smelling like a blueberry pie should. 

If you're looking to get shortening in Australia, the closest that you can get is the Australian vegetable shortening,' Copha'. It's a pure coconut fat that's pretty similar to the American brand Crisco.
